Addicting Mediterranean Turkey Meatballs

Prepping proteins ahead of time is one of my go-to hacks for simplifying meal prep. If you have prepped proteins on hand (such a these delicious meatballs), throwing together a healthy and balanced meal will be so much more of a breeze. But eating healthy doesn’t mean proteins have to be boring (i.e plain grilled chicken). Try stocking your fridge with some of these turkey meatballs and you can easily create a variety of tasty dishes. Have these over a salad, with a pasta dish, in a pita with hummus and veggies, or just by themselves!

Here’s how I make them:

Addicting Mediterranean Turkey Meatballs

Ingredients:

  • 1lb ground turkey meat

  • 1 medium onion

  • 2 cloves minced garlic

  • 1 tbsp Worcestershire

  • about 2 tbsp olive oil

  • 2 tbsp dried oregano

  • 1/4 cup bread crumbs

  • salt and pepper to taste

  • 1/2 cup crumbled feta cheese

  • lots of minced basil/parsley, plus cilantro for garnish

Directions:

  1. Sautée onion and garlic in one tablespoon of oil until onions are soft and somewhat translucent.

  2. In a large bowl combine the ground turkey with the remaining ingredients. Once the onion and garlic have cooled to room temperature, add them to the bowl with the other ingredients.

  3. Form mixture into golf-ball sized meatballs. Place each meatball on a baking sheet and cook at 375 F for 25-30 min or so, until golden brown.

  4. Enjoy by themselves, over rice, in a sandwich, or any way you like!
