GRILLED VEGGIE CHOPPED SALAD WITH HONEY-LEMON VINAIGRETTE

OAT, CRANBERRY, & DARK CHOCOLATE PROTEIN BITES

Swiss Chard With Pickled Strawberry & Shallot Vinaigrette

Ingredients:

For the dressing –

  • 1/2 cup Rose Wine Vinegar
  • 1/4 cup red wine vinegar
  • 1/4 cup balsamic vinegar
  • 4 tbsp dijon mustard
  • 2 large shallots, minced
  • 1 cup finely chopped fresh strawberries
  • 3/4 cup olive oil
  • salt/pepper

For the salad –

  • Swiss chard
  • cherry tomatoes
  • thinly sliced red onion
  • basil

Directions:

  1. Combine all 3 vinegars in a bowl. Add the minced shallots and chopped strawberries and let sit in the vinegars for at least 30 minutes.
  2. Whisk in mustard and while whisking, stream in olive oil so that the dressing emulsifies. Season with salt and pepper.
  3. Assemble salad greens, cherry tomatoes, thinly sliced red onion, and hand-torn basil in a large mixing bowl. Gently and evenly toss with salad dressing, right before serving.
