Carrot Ribbon Salad with Citrus Vinaigrette

No more boring salads!

If you’re looking for a fun way to spice up your salad game, try this fun and simple carrot ribbon salad that I have started making on repeat for my private clients. Plus, it stores well in the fridge even if it’s pre-dressed. In fact, it actually gets better with time so you can enjoy its deliciousness all week.

What you’ll need:

  • a bunch of big carrots (8-10)
  • 1/4 cup olive oil
  • zest and juice of 1 large orange
  • zest and juice of 1 lemon
  • splash of good white balsamic
  • 2 tbsp minced shallots
  • 1 teaspoon sugar
  • salt and pepper

Here’s how:

  1. Peel the carrots with a vegetable peeler.
  2. Using your vegetable peeler, peel the carrots lengthwise to make long ribbons. Set aside in a bowl.
  3. To make the dressing, mix all the ingredients together and whisk or shake well until combined. Add salt to taste.
  4. Pour the dressing over the carrots and mix until it’s evenly distributed.
  5. Topping with cute arugula microgreens is optional, but it’s definitely a fun add-on that makes for a gorgeous presentation.
